C’est un peu la r\u00e9volution dans les boulangeries en France. Pour se faire une place toujours importante dans le commerce fran\u00e7ais et lutter contre la concurrence des supermarch\u00e9s et des cha\u00eenes de boulangerie, les professionnels du pain ne doivent pas m\u00e9nager leurs efforts.<\/p>\n

R\u00e9agencements de magasins, nouveaux produits, nouvelles offres, efforts dans la mise en valeur des pains, tout doit \u00eatre fait pour r\u00e9pondre aux besoins de clients et donner une nouvelle jeunesse \u00e0 ces commerces traditionnels.<\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n

En termes d’espaces de vente, l’heure est v\u00e9ritablement \u00e0\u00a0\u00a0la remise \u00e0 plat<\/strong>. Au programme : plus de luminosit\u00e9, de la convivialit\u00e9 et la cr\u00e9ation de lieux pour manger sur place.\u00a0Il faut aujourd’hui adapter les boulangeries aux standards cr\u00e9\u00e9s par les\u00a0magasins\u00a0de boulangerie en franchise\u00a0et plus particuli\u00e8rement\u00a0aux codes auxquels les consommateurs sont dor\u00e9navant habitu\u00e9s. On pourrait citer ici la traditionnelle maison\u00a0 Poil\u00e2ne \u00e0 Paris qui a r\u00e9cemment associ\u00e9 une partie boulangerie \u00e0 un c\u00f4t\u00e9 cuisine de bar. L’ambition ?\u00a0Allier modernit\u00e9 et tradition de fabrication du pain. Concr\u00e8tement, \u00a0les meubles de boulanger traditionnels ont \u00e9t\u00e9 revisit\u00e9s en rempla\u00e7ant le fer forg\u00e9 par l’acier inoxydable bross\u00e9 et le ch\u00eane brun fonc\u00e9 par du gris\u00e9. C\u00f4t\u00e9 produits, les boulangers ont aussi pris un nouveau tournant. Comprenant qu’il fallait proposer r\u00e9guli\u00e8rement des nouveaut\u00e9s<\/strong>,\u00a0 ils innovent de plus en plus et offrent un important panel de nouveaux produits de boulangerie<\/strong> et font preuve d’une cr\u00e9ativit\u00e9 d\u00e9bordante. Des recettes innovantes mais aussi des pains destin\u00e9s \u00e0 s’accorder avec certains plats ou li\u00e9s \u00e0 une actualit\u00e9 sp\u00e9cifique. Citons Eric Kayser – et sa vingtaine de boulangeries en France\u00a0–\u00a0qui propose \u00e0 ses clients\u00a0un pain sp\u00e9cifiquement mis en valeur chaque mois, fa\u00e7on s\u00e9rie limit\u00e9e.\u00a0L’enseigne a d’ailleurs toujours suivi les saisons, proposant des produits plus blancs l’\u00e9t\u00e9 et plus fonc\u00e9s et consistants l’hiver, \u00e0 base de seigle ou de ch\u00e2taigne. <\/div>\n<\/p><\/div>\n<\/p><\/div>\n

Nouveaux produits certes, mais aussi retour vers le pass\u00e9. C’est en tout cas ce que proposent de nombreuses\u00a0boulangeries. Banette par exemple, pr\u00e9sent chez\u00a0pr\u00e8s de\u00a03 000 boulangers\u00a0en France,\u00a0propose le \u00ab\u00a0Bayard\u00a0\u00bb depuis cet automne : un pain rustique \u00e0 la tonalit\u00e9 m\u00e9di\u00e9vale, avec des \u00e9clats de sarrasin toast\u00e9s. De leur c\u00f4t\u00e9, Les Moulins Bourgeois, qui fournissent en farine les artisans, viennent de mettre au point une baguette Eclats de Lin, int\u00e9grant de la graine de lin, source d’om\u00e9gas 3.
