Le pain reste un aliment de base et le chiffre d’affaires des boulangeries-p\u00e2tisseries a tendance \u00e0 se stabiliser dans l’ensemble bien qu’il y ait de plus en plus de franchises dont les CA sont bien plus \u00e9lev\u00e9s que la moyenne. Deux formules diff\u00e9rentes sont propos\u00e9es, chacune offrant ses opportunit\u00e9s sur un march\u00e9 en plein changement.<\/p>\n

Au d\u00e9but du si\u00e8cle dernier chaque fran\u00e7ais consommait un kilo de pain par jour en moyenne, en 1970 on n’en mangeait plus que 200 grammes et aujourd’hui autour de 150 grammes. C’est pourquoi le nombre de points de vente a sensiblement diminu\u00e9. On a connu l’apparition de r\u00e9seaux sp\u00e9cialis\u00e9s dans la viennoiserie qui font concurrence \u00e0 la boulangerie traditionnelle. Quant au march\u00e9 du pain <\/strong>lui-m\u00eame il conna\u00eet une p\u00e9riode de profonde restructuration.<\/p>\n

Aujourd’hui deux formules semblent dominer. D’une part le pain haut de gamme<\/strong>, tel celui propos\u00e9 par des franchises comme le Moulin de Pa\u00efou mais aussi par de nombreux ind\u00e9pendants. D’autre part des produits chauds \u00e0 toute heure\u00a0<\/strong>gr\u00e2ce aux r\u00e9seaux de terminaux de cuisson comme\u00a0La Mie Caline.<\/font><\/strong><\/a> <\/font><\/strong>On peut vendre du pain sans \u00eatre boulanger. La l\u00e9gislation de 1996 a bien pr\u00e9cis\u00e9 que l’appellation \u00a0\u00bb boulangerie \u00a0\u00bb \u00e9tait r\u00e9serv\u00e9e aux seuls artisans qui fabriquent leur p\u00e2te sur place. Pourtant ce qui compte pour la qualit\u00e9 du pain ce sont surtout les ingr\u00e9dients et non pas sa fabrication sur place. <\/p>\n
